1 large egg mixture -- (as in basic french omelet), * see note
1 tablespoons butter
1/8 pound salt pork -- diced
2 medium boiled potatoes -- diced

Preparation / Directions:

* Note: The recipe for "Basic French Omelet" is included in this database. In omelet skillet, heat butter. Add salt pork and potatoes and cook for 15 minutes, or until golden brown. Add omelet mixture to pan and make omelet. Fold omelet in two or serve flat. Suggested Wine: A chilled dry white wine: Pouilly-Fuisse; etc.
