6 large eggs
4 tablespoons half and half
1 dash salt
1 dash freshly ground pepper
1/2 pound fresh mushrooms
2 tablespoons butter or margarine
2 tablespoons finely chopped chives or dill
2/3 pound fresh cooked shrimp

Preparation / Directions:

Rinse or wipe the mushrooms clean. Slice. Peel the shrimp, if not peeled. Grease a casserole dish with a little butter. Saute the mushrooms in butter for a few minutes until butter stays clear in the pan and almost all dampness from the mushrooms has evaporated. Spread mushrooms in an even layer in the casserole dish. Sprinkle with chives or dill. Layer half of the shrimp on top. Quickly beat the eggs with the half and half. Add salt and pepper. Pour mixture over mushrooms and shrimp. Bake at 325 degrees for about 30 minutes or until set in center. Garnsh with remaining shrimp on top.
