Deviled Pesto Eggs

Ingredients:

6 large hard-cooked eggs
1/4 cup mayonnaise
1/2 tablespoons dijon mustard
1 tablespoons pesto sauce
1 tablespoons grated parmesan cheese
1/2 tablespoons lemon juice
1/4 teaspoon salt and freshly ground pepper
1/4 teaspoon chopped fresh parsley
1/4 cup capers
 

Preparation / Directions:

Peel the eggs and slice in halves. Remove yolks. In a small bowl, mash yolks. Add mayonnaise and mustard, blending until smooth. Stir in pesto, cheese, and lemon juice. Season with salt and pepper. Spoon into egg white shells and garnish with parsley and capers.
