Preparation / Directions:
1. Combine eggs with salt and pepper. Set aside.
2.Heat wok with oil and sesame oil. Add onion and fry until soft. Push aside, add prawns and stir-fry well. Add seasoning to mix. Dish out and set aside.
3. Heat oil in a non-stick pan and then add beaten eggs. Swirl pan around to spread the omelette evenly.
4. When eggs have set, add the cooked prawn mixture and sprinkle with spring onion and red chillies.
5. Turn the four corners of the omelette to cover the filling. Cover pan with a lid for one to two minutes, then turn out omelette onto a plate and serve immediately.
