Eggplant A La Mexicano

Ingredients:


4 small onions -- coarsely chopped

2 Medium green peppers -- coarsely chopped

3 tablespoons bacon drippings

1 medium eggplant -- cubed

4 medium tomatoes -- cubed

1 teaspoon salt

2 teaspoons chile powder

2 tablespoons all-purpose flour
 

Preparation / Directions:


Saute onion and green pepper in bacon drippings in a large skillet. Add next 4 ingredients; cover and cook over medium heat 10 to 12 minutes. Stir in flour and cook, uncovered, for 2 minutes.
