Ingredients:


2 slices ---UCSD HEALTHY DIET FOR DIABETICS---

2 teaspoons butter (10gm)

1/4 cup canned tomatoes (50 gm)

1/2 teaspoon chives -- chopped (2gm)

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Brown the eggplant in butter. Add salt and pepper. Heat tomatoes in a separate pan and pour over eggplant. Sprinkle with chopped chives.
