Preparation / Directions:
1. Remove eggs and butter from the refrigerator and bring to room temperature. Heat oven to 350Á F (175Á C). Grease bottom of a 9x5-inch loaf pan. To aid in removal of the loaf, you may also wish to line the bottom and wide sides with a strip of parchment paper.
2. Beat eggs in a large bowl. Add sugar, eggnog, margarine, and rum. Blend well. Add flour, baking powder, salt and nutmeg. Stir just until the dry ingredients are moistened. Pour into greased pan.
3. Bake at 350Á F (175Á C) for 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minute before; removing from pan. Cool completely.
4. Wrap tightly and store in refrigerator until ready to serve.
