Duck Marinade With Mango and Chilli Salsa

Ingredients:


2 medium duck breasts 7 oz each

---MARINADE---

1/2 medium grated carrot

1 clove garlic

1/2 medium red onion -- chopped

2 teaspoons clear honey

50 milliliters white wine

1 teaspoon coriander

1 tablespoons soy sauce

1 teaspoon sesame oil

1 medium orange zest and juice

---SALSA---

1/2 medium fresh mango - diced small

1/2 medium red chilli diced small

1/4 medium red onion -- diced small

1 teaspoon chopped mint

---SALAD---

1 recipe deep fried rocket

1 tablespoons toasted sesame seeds
 

Preparation / Directions:


Marinade the duck breast for about 2-3 hours then seal in a very hot pan then into the oven for approximately 3-5 minutes. When pink in colour remove and leave to rest on one side. Combine all the salsa ingredients together, season and add a touch of oil to moisten. Place this around the edge of the plate, slice the duck and place around the middle. Garnish the middle with deep fried rocket and toasted sesame seeds.
