Spinach Bacon Salad With Ruby Dressing

1 tablespoon red wine vinegar
1 teaspoon salt and pepper to taste
3 tablespoons vegetable oil
2 tablespoons golden brown sugar -- packed
6 cups spinach leaves -- torn into bite-size
1/2 medium red onion -- thinly sliced
4 slices bacon

Preparation / Directions:

Chop bacon and cook in microwave or on top of stove until crisp. Drain on paper towels. Drain plums, reserving 1/4 cup syrup. Cut plums in half, discarding pits. To make dresing coarsely cut up 2 plums. Place in food processor with metal blade or blender and process until finely chopped. Add vinegar, oil, brown sugar, reserved plum juice and salt and pepper to taste. Mix until blended. Cut remaining plums into bite-size pieces. In a large bowl combine plums with spinach, onions and crumbled bacon. Add dressing and toss well. Prep Time: 15 mintues Cook Time: About 10 minutes Makes: 6 servings Canned plums are the sweet jewels in the salad and dressing.
