Tomatillo Guacamole

Ingredients:


1 clove garlic

1 medium shallot -- peeled

2 tablespoons cilantro -- coarse chop

2 medium tomatillos -- cleaned, quartered

1 medium avocado -- cleaned, pitted, diced - 1/2 inch cubes

1/2 medium lime -- juice of

1/4 teaspoon red pepper flakes

1/4 teaspoon salt and pepper to taste
 

Preparation / Directions:


Mince together garlic, shallot, cilantro and tomatillos in food processor or by hand. Spoon into serving bowl. Stir in avocado, lime juice, red pepper flakes and salt and pepper to taste. Set aside 5 minutes for flavors to blend.
