Spinach Orange Salad

2 tablespoons canola oil
3 tablespoons orange juice
1 tablespoon lemon juice
1 teaspoon grated orange peel
1 teaspoon fresh ground pepper and salt -- to taste
5 cups torn fresh spinach leaves -- washed and dried
1/2 cup mandarin oranges -- packed in their own juice, drained
1/2 cup thinly sliced dried apricots
1 small red onion -- thinly sliced
1 tablespoon toasted pine nuts

Preparation / Directions:

Whisk all dressing ingredients together and set aside. In a large salad bowl, toss together the salad ingredients. Add the dressing and toss to coat. Serve immediately.
