Diabetic Lemon Cake Pie

Ingredients:

1 crust baked pie shell 9 inch
2 tablespoons flour
2 tablespoons margarine -- soft
1 tablespoons lemon rind
3 tablespoons lemon juice
1 Cup skim milk
2 large eggs -- separated
 

Preparation / Directions:

Combine sugar replacement, flour, margarine, lemon rind and juice, skim milk, and egg yolks. Beat vigorously. Fold in egg whites (well beaten). Pour into unbaked pie shell. Bake at 325 for 1 hr., or until set.
