Connie's Fig Chewies

Ingredients:


1 cup dried figs -- chopped

1/2 cup water

1 3/4 cups flour -- sifted

2 teaspoons baking powder -- double acting

3/4 teaspoon salt

1 cup shortening

1 cup brown sugar -- firmly packed

1 large egg

1 teaspoon vanilla

1 1/3 cups flaked coconut

1/2 cup pecan halves
 

Preparation / Directions:


1. Combine figs and water in saucepan. Bring to a boil over medium heat. Cook and stir until figs are tender, about f minutes. Cool. 2. Measure sifter flour, add baking powder and salt and sift together. 3. Beat egg and vanilla until light and fluffy. 4. Then add figs and mix well. 5. Add flour mixture in small amounts, beating well. 6. Drop by rounded teaspoonful into coconut and shape into balls. 7. Place ball on greased baking sleet. Press pecan half into top of each cookie. 8. Bake in moderate oven (375) for 15 to 18 minutes or until lightly browned. Makes 4 dozen cookies.
