Pineapple Cream Pie - Grandma's

Ingredients:


1 crust 9-inch Pie Crust - Already Baked

---FILLING

1/3 Cup Flour

2/3 Cup Granulated Sugar

1/4 teaspoon Salt

2 Cup Scalded Whole Milk

3 large Egg Yolks slightly beaten

2 Tablespoons Butter

1/2 teaspoon vanilla

1 Can Crushed Pineapple - drained

---MERINGUE

3 large Egg Whites - Stiffley beaten

1/2 teaspoon Cream of Tarter

6 Tablespoons Sugar
 

Preparation / Directions:


Prepare in advance 9" pie crust - bake and cool. In saucepan mix flour, sugar and salt. Gradually add scalded milk. Cook on low until mixture is thick. In a small bowl slightly beat egg yolks. Add a small amount of the hot mixture to the egg yolks, then slowly stir yolks into remaining hot mixture and cook 2 minutes. Remove from heat and cool for 5 minutes. Add butter, vanilla and pineapple. Pour into cooled, baked pie shell and cover with meringue. Bake 350 for 10 Minutes. Refrigerate until cold.
