Rhubarb Cream Delight

1 1/2 Cups Flour
3 tablespoons Sugar
3/4 Cup Butter
---Cream Filling
2 Cups Sugar
4 large egg yolks -- Beaten
2/3 Cup Cream
3 tablespoons Flour
1/2 teaspoon Nutmeg
4 Cups Chopped Rhubarb
4 large egg whites
1/4 Cup sugar

Preparation / Directions:

Combine crust ingredients until crumbly and press into a 13x9x2 inch baking pan. Bake at 350 degrees for 20 minutes. While crust is baking, combine all filling ingredients and cook in a heavy saucepan over medium heat, stirring constantly, until thickened. Pour hot filling into the crust. Top with meringue made by beating egg whites with sugar until thick and satiny (note, be sure to gradually beat in sugar!!). Bake at 325 degrees for 15-20 minutes or until golden brown.
