Ingredients:

18 ounces pumpkin pie filling
1 quart vanilla ice cream
1 teaspoon toasted coconut -- (for garnish)
 

Preparation / Directions:

1. Chill pie filling overnight. 2. Just before serving, spoon 2 tablespoons pie filling into each of 6 parfait glasses; add small scoop of ice cream. 3. Repeat layers until glasses are filled; garnish with toasted coconut
