No Bake Energy Bars

1 spray Watkins Cooking Spray
4 cups cornflake cereal
1 1/2 cups quick-cooking oats
1 cup miniature semi sweet chocolate chips
1 package mixed dried fruit bits -- 6oz
1 cup creamy or chunky peanut butter
3/4 cup white corn syrup
1 teaspoon Watkins Vanilla Nut Extract
1/2 teaspoon Watkins Cinnamon

Preparation / Directions:

Lightly spray a 15 x 10 inch jellyroll pan with Cooking Spray; set aside. In large bowl, combine cereal, oats, chocolate chips, and fruit bits; mix well, then set aside. In small saucepan, combine peanut butter and corn syrup. Cook over medium low heat, stirring constanly, just until mixture is hot and smooth. Do not overcook or mixture will become grainy looking. Stir in Vanilla Nut Extract and Cinnamon. Carefully spoon hot peanut butter mixture over cereal mixture; mix well. With hands, press cereal mixture firmly into prepared pan. Refrigerate 10 to 15 minutes. Cut into 48 bars. Best kept chilled. Makes 48 bars.
