2 Teaspoons unflavored gelatin
3 Tablespoons water
3 large eggs
2/3 Cup sugar
6 Tablespoons lemon juice
2 medium grated rind of two lemons

Preparation / Directions:

Place gelatin and water in a bowl over a pan of hot water. Leave until completely dissolved. Separate the eggs. Whisk the yolks and sugar until thick and pale. Gradually mix the lemon juice and rind with the gelatin. Leave until almost at setting point. Then beat the egg whites stiff and fold gently into lemon mixture. Allow to set in refrigerator.
