Grapefruit Ice

Ingredients:

2 cups granulated sugar
2 cups water
6 medium grapefruits
1/4 cup lemon juice
 

Preparation / Directions:

1. In a saucepan, combine sugar and water, stirring to dissolve sugar. Bring to a boil and boil for about 5 minutes. Remove from heat. 2. Grate rind from 1 grapefruit (be careful to grate only yellow part - white part is too bitter). Stir rind into syrup and let cool. 3. Squeeze juice from the 6 grapefruit to measure 4 cups. Stir grapefruit juice and lemon juice into cool syrup. 4. Freeze and serve.
