1 Shell nuts and rinse with hot water.
Helps to remove dust and residual oil
that seems to cause allergic reactions in
some people.
2 Spread nuts onto trays in a single layer.
3 Dry at 90* to 100* for approximately 24
to 48 hours or until brittle. If
choosing to use nuts with the shells -- drying time will be
about 10 hours. To
test -- open a shelled nut.
The nutmeat should be tender but not
shriveled.
4 Allow nuts to cool. Store in glass jars
or plastic bags. Because nuts
contain so much oil -- there is a tendency
for the oils to become rancid, so I
choose to freeze nuts to guarantee
freshness.
5 When ready to use the nuts -- allow the jar to
come to room temperature
first.
The frozen nuts will immediately draw
moisture from the environment which
leads
to possible molding or faster rancidity.
So use them up fast..
