Tapioca Thai Style

3 cups water
3 teaspoons sugar
1/8 teaspoon salt
1/3 cup quick cooking tapioca
1 cup coconut milk

Preparation / Directions:

1. bring water to a boil in a 2 quart saucepan. 2. stir in sugar and salt. 3. add tapioca and return to a boil. 4. stir in coconut milk. 5. reduce heat to low while continuing to stir to avoid sticking. 6. cook for 30 minutes or until thickened. stirring occasionally. 7. serve warm or cold. note: if serving cold, place in inidividual bowls while still warm.
