Ingredients:

6 crusts prepared single-serving graham cracker crusts
1 package vanilla pudding and pie filling mix -- (not instant)
1/3 cup water
1 1/2 cups Carnation evaporated lowfat milk -- (12 fluid-ounce can)
1 tablespoons lemon juice
2 teaspoons grated lemon peel
1 pint sliced strawberries -- kiwifruit or orange sections -- (optional)
1 bunch mint leaves -- (optional)
 

Preparation / Directions:

1. Combine pudding mix and water in small saucepan.

2. Add evaporated milk, lemon juice and lemon peel; stir until smooth.

3. Cook over medium-low heat, stirring constantly, until mixture comes to a boil and thickens.

4. Pour into crusts; chill for 1 hour or until set. Top with fruit and mint leaves before serving.
