Preparation / Directions:1. Combine pudding mix and water in small saucepan.
2. Add evaporated milk, lemon juice and lemon peel; stir until smooth. 3. Cook over medium-low heat, stirring constantly, until mixture comes to a boil and thickens. 4. Pour into crusts; chill for 1 hour or until set. Top with fruit and mint leaves before serving. | |||||||||
