Leek Soup

Ingredients:


1 1/2 pounds leeks -- (about 6 cups) washed, trimmed, and cut into 1 in. pieces

3 cups chicken broth

2 medium apples -- peeled and cut into 1/2 inch pieces

1 medium potato -- peeled and thinly sliced

1/2 cup orange juice

1/2 cup tomatoes -- chopped

1/2 cup carrots -- thinly sliced

1 tablespoon fresh basil or 1 1/2 t dried

1/2 teaspoon curry powder

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Combine all ingredients in a soup kettle. Cover and bring to a boil. Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve. SOURCE: Know Your Onions
