Sugar Cookies - An Adaptation Of A Russian Recipe

1 cup butter -- * see note 1
1/3 cup sugar
2 large eggs
1 1/2 teaspoons vanilla
1 teaspoon baking powder
3 cups flour
1/2 teaspoon baking soda

Preparation / Directions:

Butter must be room temperature. In a bowl, beat butter, sugar, eggs, and vanilla. Mix well. Should be nice and fluffy. Put flour, soda and baking powder in another bowl. Mix well to distribute soda and baking powder throughout flour. Gradually add dry ingredients to creamed mixture. Beat well. You will have to switch to and mixing. Cover and chill overnight. Preheat oven to 350 degrees. Take a piece of dough. If it is too stiff, let the dough sit for a few minutes to warm up a bit. Roll out dough to 1/8 inch thickness on a well-floured board. Cut into favorite shpaes and place on greased cookie sheets. bake for 5-7 minutes or until lightly browned. Cool on racks. Decorate as desired. Serving Ideas : Freezes well, if care is taken to keep them flat.
