Preparation / Directions:
Crackers will remain fresh and crisp for a few weeks if stored correctly. Let them cool completely and keep them in an airtight container. Placing a few grains of rice in the storage container will absorb moisture and help keep your crackers crispy . Using a tea ball to hold the rice is convenient. You can even buy silica gel cracker crispers in food specialty stores. If your crackers become soggy, you can restore their crispness by heating them in a preheated, low-temperature oven (250-275) for a few minutes.
Freezing baked crackers will extend their life even longer. After they are cooled, freeze them in an airtight container, a double thickness of aluminum foil, freezer bags, or two layers of plastic wrap. After thawing crackers, recapture their crispness by heating them for a few minutes in a low temperature oven.
