Oatmeal-Apple Cookies

Ingredients:

3 cups Oats
1 cup White flour
4 teaspoons Cinnamon
2 teaspoons Baking powder
2 teaspoons Baking soda
1/4 teaspoon Nutmeg
1/2 cup Brown sugar
1/2 cup Apple juice
1 teaspoon Vanilla extract
1 medium Peeled apple -- grated
3/4 cup Raisins
 

Preparation / Directions:

In a food processor, combine 1 cup of oats with the flour, cinnamon, baking powder, baking soda, nutmeg and sugar. Process until the oats are finely ground and the rest of the ingredients are well mixed. Stir in the rest of the oats. Add the rest of the ingredients, in order, mixing well after each addition. Drop by tablespoonfuls onto cookie sheets. Bake at 400F for 12 to 15 minutes, checking often after 12 minutes to ensure that the cookies do not burn. Allow to cool slightly, then transfer to a wire rack.
