Meringue Cookies

2 large Egg White
2 Cups Powdered Sugar
1 Teaspoon Cider Vinegar
1 Teaspoon Vanilla
1 cup Finely Chopped Walnuts
1 cup Finely Chopped Dried Apricots

Preparation / Directions:

Place egg whites in bowl. Attach bowl and wire whip. Turn to speed 8 and whip until soft peaks form. Reduce to speed 4 and gradually add powdered sugar, about 1 minute; whip until well blended. Stop and scrape bowl. Turn to speed 10 and add vinegar and vanilla; whip 1 minutes. Reduce to stir speed and quickly add nuts and apricots, mixing just until blended. Drop by teaspoonfuls onto greased and gloured baking sheets. Bake at 300 for 15 to 17 minuts. Cool on wire racks.
