Maine Pumpkin Cookies With Frosting

Ingredients:


1/2 Cup granulated sugar

1/2 Cup firmly packed brown sugar

1/2 Cup shortening

2 large eggs

1 cup canned or cooked and strained pumpkin

1 1/2 Cups sifted flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon vanilla

1 cup candied fruit

1/2 Cup chopped nuts

---Frosting:

1/4 Cup light brown sugar

1 teaspoon vanilla

1 cup confectioners sugar

1/4 Cup butter or margarine (1/2 stick)
 

Preparation / Directions:


Cream sugars and shortening together. Add eggs, beat well. Add pumpkin, then sifted dry ingredients. Mix well. Add vanilla, candied fruit and nuts. Drop by spoonful onto greased cookie sheets. Bake at 350 degrees for 10 -12 minutes. Remove from pans. Cool, then frost. MAKES 3 dozen medium size cookies Frosting: Mix margarine or butter and brown sugar in saucepan. Cook over Iow heat for about 10 minutes. Add confectioners sugar and vanilla. Mix well and spread on cookies. (If frosting is too thick, add a bit of cream or milk before spreading.) Pumpkins grow faster when fed with milk or sugar water through a slit in their stalks. Some double their size in only a few days.
