4 cups cookie mix
1 tablespoon ginger
1 teaspoon cinnamon
1 large egg
1/4 cup dark molasses
1 cup sugar to taste

Preparation / Directions:

Mix together cookie mix, ginger, cinnamon, egg and molasses. Spread in a well-greased 9- by 13- by 2-inch pan. Bake at 350 degrees for 20 to 25 minutes. When done, center should spring back when pressed lightly. While warm, cut into 1 «-inch squares. Sprinkle with sugar to taste. VARIATION: To make gingerbread men, divide dough in half, cover and chill 1 hour or until dough is easy to handle. Roll dough, half at a time, on floured board to 1/8-inch thickness. Cut with shaped cutters. Arrange 1 inch apart on greased cookie sheet. Sprinkle with sugar. Bake at 375 degrees for 8 to 10 minutes; do not brown. Cool on wire rack. Makes 48 squares
