Franny's Big Bottom Pies

Ingredients:

1 large bottom pies cookie batter:
2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1/2 Teaspoon salt
1 cup granulated sugar
4 Tablespoon unsalted butter
1 large egg
1 Teaspoon pure vanilla extract
1/2 cup hot water
1 Teaspoon baking soda
1/2 cup nonfat buttermilk
8 Ounces semisweet chocolate mini-morsels
---FRANNYS FILLING
1/2 pound unsalted butter cut into 1 ounce bits
1 Tablespoon pure vanilla extract
4 cups confectionary sugar
8 Ounces semisweet chocolate mini-morsels
 

Preparation / Directions:

Make the big bottom cookies: Preheat the oven to 375 degrees F. in a sifter combine the flour, cocoa powder, and salt. Sift onto a large piece of wax paper and set aside until needed. Place the granulated sugar and 4 Tbs. butter in the bowl of an electric mixter fitted with a paddle. Beat on medium for 3 mins. until smooth. Use a rubber spatula to scrape down the sides of the bowl, then continue to beat on medium for 2 more minutes until very smooth. Scrape down the bowl again. In a 1 quart bowl whisk together the hot water, and the baking soda. Set aside for a few seconds. Operate the mixer on low while first gradually adding the siffed dry ingredients, then the buttermilk, followed by the hot water and baking soda mixture. Mix until incorporated about 1 minute. Stop the mixer, add 8 oz chocolate minimoresels and mix on medium for 30 seconds. Remove the bowl from the mixer and use a rubber spatula to finish mixing the batter until thoroughly combined. Use a large heaping tablespoon of batter, for each cookie, portion 6 cookies evenly spaced onto each of 4 nonstick baking sheets. Place the baking sheets on the top and center racks of the preheated oven and bake for 10 min. until the tops no longer appear wet., rotating the sheets from top to center halfway through the baking time. Remove the cookies from the oven and cool on the baking sheets for 30 min. PREPARE FRANNY'S FILLING: place 1/2 lb. butter in the bowl of an electric mixer fitted with paddle. Beat on medium for 2 min. Use a rubber spatula to scrape down the sides of the bowl. Add 1 Tbs. vanilla extract and beat on high for 2 min until light. Operate the mixer on low, while gradually adding the confectionary sugar until incorporated, about 1 minute. Scrape down the sides of the bowl. Beat on high for 2 min. until fluffy. Stop the mixer and add 8 oz. chocolate mini- morsels, and mix on medium for 30 seconds. Remove the bowl from the mixer and use a rubber spatula to finish mixing the filling until thoroughly combined. ASSEMBLE THE BIG BOTTOM PIES. invert half of the cookies onto wax paper. Portion 3 Tablespoons of Franny's filling onto each inverted cookie half. Place the remaining cookies right side up or should i say bottom side down. onto the filling. Gently but firmly press down on the top cookie to spread the filling to the edges. Serve immediately, or indivdually wrap in plastic wrap and store in a tightly sealed plastic contai
