Preparation / Directions:
In a food processor, combine shortening, cream cheese, and fructose; mix until creamy in texture. Add the egg substitute and water; mix thoroughly. Sift flour, baking powder, and salt (if desired) together and add to creamed mixture; blend well. Shape into a roll about 1and1/2 inches in diameter and refrigerate overnight.
Cut into 1and1/2-inch slices and place on ungreased cookie sheets. Bake at 350 degrees for 8 to 10 minutes or until the tops are golden brown. Remove cookies from the oven, and let them cool on racks.
