2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter or margarine -- softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla
1 1/2 cups shredded sweetened coconut

Preparation / Directions:

1.Preheat oven to 375ΓΈ. Cmbine flour, baking powder, and salt in a medium bowl. Beat butter and sugar in large mixing bowl at medium speed until light and fluffy. Beat in egg and vanilla. beat in flour mixture at low speed just until combined. Stir in coconut. 2. Drop dough by level tablespoonfuls onto ungreaased cookie sheets. With the bottom of a glass dipped in flour, flatten each cookie ti the thickness of 1/4 inch, then lightly press with the tines of a fork to form edges. bake 10 to 12 minutes, until edges are golden. Transfer cookies to wire racks to cool completely. Makes 3 dozen.
