Basic Brown Sugar Drop Cookie with Variations

Ingredients:

1/2 cup vegetable shortening
1 cup brown sugar
1/2 cup white sugar
2 large eggs
1 cup sour cream *or*
1 cup evaporated milk -- undiluted
1 teaspoon vanilla
2 3/4 cups flour
1/2 teaspoon baking powder
1/8 teaspoon salt
 

Preparation / Directions:

In large mixing bowl beat sugars, eggs, and shortening until light and fluffy. Stir in sour cream and vanilla. Sift dry ingredients together, add to sugar mixture. Mix thoroughly. Drop on greased cookie sheet and bake 10 minutes at 375. Remove from pan and cool on wire rack. VARIATIONS FOLLOW; COCONUT DROPS- Add 1 Cup moist shredded Coconut with dry ingredients. CHOCOLATE CHIP DROPS- Add 2 Cups Chocolate Chips or any other flavor with flour. CHOCOLATE DROPS- Add 2 squares melted Chocolate with shortening. CHOCOLATE CHERRY- Add 2 Cups candied or maraschino cherries to the above chocolate mixture. CRANBERRY NUT- Add 1 Cup dried sweetened Cranberries and 1/2 Cup Nuts. FRUIT and NUT- You may add 1 Cup Any Fruit and 1 Cup any Nuts or 2 Cups Fruit only. HOLIDAY DROPS- Add 2/3 Cup coarsely chopped Dates and 2/3 cup coarsely chopped Cherries to the dough. Top each cookie with a pecan half before baking. PUMPKIN DROPS- Delete 1/2 Cup Sour Cream; Add 1 Cup Pumpkin Puree. RAISIN DROPS- Add 1 1/2 Cup Plumped Raisins with flour. SPICE DROPS- Add 1 teas. Cinnamon, 1/2 teas. Cloves, 1/4 teas. Nutmeg.
