Confetti Sweet And Sour Slaw |

Ingredients:
1 large red cabbage -- shredded (9 cups) |
1 pound carrots -- shredded (3 cups) |
2 medium red or yellow bell peppers -- cut into thin strips |
1 small purple onion -- cut into thin strips |
1 piece celery rib -- sliced |
1/2 cup golden raisins |
1/2 cup apple cider vinegar |
1/4 cup vegetable oil |
1/4 cup honey |
1 teaspoon lemon juice |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 bunch Garnish: fresh cilantro sprig |

Preparation / Directions:
Combine first 6 ingredients in a large bowl or heavy duty zip-top plastic bag.
Combine vinegar and next 5 ingredients in a jar; cover tightly; and shake vigorously. Pour over cabbage mixture, tossing to coat. Cover or seal; chill. Garnish, if desired.
