21 ounces cherry pie filling
2 tablespoons Kirsch or lemon juice
7 ounces honey dat muffin mix
3/4 cup applesauce
1 large egg
1/2 Cup sugar
1/2 gallon vanilla ice cream -- optional

Preparation / Directions:

In an 8x8" glass dish, microwave pie filling on High for 3-5 minutes until hot and bubbly, stirring once. Stir in lemon juice or Kirsch. Meanwhile, in a medium mixing bowl, stir together miffin mix, applesauce and egg. Spoon muffin batter into mounds atop hot cherry mixture in dish. Sprinkle with sugar. Bake at 425 F. for 20 minutes or until toothpick inserted near center of muffin mound comes out clean. Serve warm with vanilla ice cream, if desired.
