Ingredients:

48 pieces manilla clam
1/4 cup salt
3 tablespoons cornmeal
 

Preparation / Directions:

COMBINE CLAMS, SALT, AND 12 QUARTS COLD WATER-MIX WELL SPRINKLE CORNMEAL OVER THE TOP OF WATER ALLOW TO SOAK FOR 3-4 HOURS DRAIN, RINSE, AND DRAIN WELL ARRANGE CLAMS INTO A STEAMER PLACE OVER BOILING WATER AND STEAM UNTIL THEY OPEN (DISCARD ANY NOT OPEN) SHUCK OR LEAVE IN SHELLS AS DESIRED PLACE ONTO A GRILL, COVER, AND SMOKE OVER A SLOW HICKORY OR APPLE FIRE FOR 1-1/2 TO 2 HOURS SERVE AT ONCE
