Turkey Chowder

1/2 cup chopped onion
1 cup sliced celery
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried thyme
5 cups turkey or chicken broth
2 medium potatoes -- peeled and cubed
1 cup chopped carrots
1 cup sliced zucchini
1/2 cup unsweetened apple juice
3 cups cooked chopped turkey

Preparation / Directions:

1. Saute the onion and celery in the margarine.

2. Add the flour, salt, pepper and thyme. Gradually add the broth. Add the potatoes and carrots.

3. Cover and simmer for 15 minutes or until the vegetables are tender.

4. Add the zucchini, apple juice, and turkey. Continue cooking over low heat for 10 minutes.
