Manhattan Clam Chowder 2

Ingredients:

6 slices bacon slices -- diced
1 large onion -- chopped (1 cup)
1 1/2 cups carrots -- diced
2 large potatoes -- pared and diced
1 teaspoon salt
1 cup clam juice -- (8 oz. bottle)
16 ounces canned clams -- (2 cans 8 oz. ea.)
16 ounces canned tomatoes
1/2 teaspoon thyme -- crumbed
 

Preparation / Directions:

Saut‚ bacon until crisp in a kettle; remove and set aside for next stop. Stir onion into droppings in kettle; saut‚ until soft. Add potatoes, salt, and claim juice; cover. Simmer 15 minutes, or until potatoes are tender. Stir in clams, tomatoes, thyme, and cooked bacon; simmer 15 minutes longer. Ladle into soup bowls; garnish with finely cut chives, if you wish.
