Chicken Wings In Five-Spice Powder

Ingredients:


12 pieces chicken wings

1 cup water-chestnut flour -- see * note

4 cups peanut oil for deep-frying

--- marinade ---

1/2 teaspoon freshly grated ginger

1/8 cup light soy sauce

1/8 cup dry sherry or Chinese rice wine

1/2 teaspoon five-spice powder -- see * note
 

Preparation / Directions:


* Note: Available in Oriental markets. Cut each wing into three logical pieces. Save the tips for soup and use only the two meatier parts for this recipe. Prepare the marinade and marinate the wing pieces for one-half hour. Drain and toss in the water-chestnut flour. Deep-fry at 360 degrees until golden brown, about 5 minutes. Makes 24 pieces. Comments: It takes a pile of these to fill a family, but they make a wonderful addition to a Chinese meal of several courses.
