Turkey-Black Bean Chili

Ingredients:

1/4 cup chicken broth
3/4 pound ground turkey
2 medium onions -- chopped
1 medium red bell pepper -- cored and chopped
1/2 cup diced canned mild green chilies -- drained
3 cloves garlic
3 1/2 cups canned tomatoes -- crushed, juice saved
1 1/2 cups tomato paste
8 cups black beans -- rinsed and drained
1 1/2 tablespoons chili powder
3/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
2 bunch scallion -- minced
 

Preparation / Directions:

Heat broth in large pot or saucepan. Add turkey and saute until no longer pink, about 5 minutes. Add remaining ingredients, except scallions. Cover and simmer 25 minutes. Serve topped with scallions.
