Chili of Penultimate Grooviness

Ingredients:

1 pound Black beans -- dried
6 cloves garlic
1/2 pound Pinto beans -- dried
30 ounces Tomatoes -- crushed
1/4 pound Kidney beans -- dried
3 tablespoons Tomato paste
2 medium Poblano peppers -- chopped
4 tablespoons Chili powder
1 medium Green bell pepper -- chopped
3 tablespoons Cumin powder
2 medium Tomatoes -- coarsely chopped
1 tablespoons Salt
2 medium Red onions -- minced
1/2 tablespoons Black pepper
2 large Carrots minced
2 Cup Tvp
 

Preparation / Directions:

Soak beansovernight or bring to a boil, then turn off heat and soak for one hour. Saute vegetables until soft and add to beans along with rest of ingredients except TVP. Cook for one and a half hours, adding TVP the last 20 minutes of cooking. 2nd place winner in the 5th Annual Lone Star Vegetarian Chili Cook-Off, held Oct. 3 in San Antonio.
