Chicken-French Onion Soup

1 medium Cornish game hen Carcass with some meat still left
1 small onion (about 2 to 3 oz)
1 teaspoon Garlic
1 teaspoon onion powder
1 tablespoons Water
1 package Crackers
2 ounces cheese shredded (munster, montery, cheddar)

Preparation / Directions:

Cook the hen carcass in enough water to cover parts (break them apart). Peel onion and slice into thin rings and cook in with hen. Add seasonings. When all is cooked and onion slices are very tender pour into heatproof bowl. Top with tofu "crackers" and sprinkle cheese on top. Heat in microwave to melt cheese or if bowl is oven proof, put under broiler until cheese is brown and bubbly.
