Poppy Seed Chicken

4 large boneless skinless breast *(you could use boneless skinless tenders also)
1/2 can cream of chicken - look for the unsalted
1/2 cup sour cream
1 tablespoon poppy seeds (store in the frezer they will keep longer)
1 cup shreded american cheese - optional
1 package Ritz crackers
1/4 cup buter - melted
1 teaspoon Salt and Pepper to taste

Preparation / Directions:

Boil the chicken until cooked through. Pull the chicken apart into bite sized pieces. Mix your sour cream and cream of chicken in a large bowl, add your pulled chicken in. Next add the poppy seeds. Stir. Salt and pepper at this time. At this point you can add the cheese(It is very good with the cheese) Stir well. Add to a baking dish. Crush the Ritz crackers (fine), sprinkle over the top of the chicken mix, lightly press crackers in, pour melted butter over crackers. Bake at 350 degrees for 15-20 min. Enjoy.
