Glazed Cornish Hens

4 pounds Cornish hens
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1 spray nonstick cooking spray
3/4 cup peach preserves
2 tablespoons soy sauce low-sodium
1 teaspoon fresh ginger grated peeled

Preparation / Directions:

Preheat oven to 350 oF. 2. Remove and discard giblets and necks from hens. Rinse hens under cold water, and pat dry. Remove skin, and trim excess fat. Split hens in half lengthwise; sprinkle with salt and red pepper. 3. Place hen halves, meaty sides up, on a broiler pan coated with cooking spray; bake at 350 oF for 20 minutes. Combine peach preserves, soy sauce, and ginger, and brush over hens. Bake an additional 45 minutes or until juice runs clear, basting frequently with preserves mixture.
