Preparation / Directions:

The secret to creating international style is in the spices. For example, a simple and sensational Indian meal could consist of sauteed chicken lightly seasoned with curry and garlic, and curried rice that's a snap to prepare. Simply cook 1 cup rice with a small apple (peeled, cored, and chopped), 1/4 cup raisins (optional), 1/2 cup chopped onion, 1 clove garlic (minced), 3 tablespoons butter, 1 tablespoon curry powder, 1/2 bay leaf and 1 1/2 cups fresh or canned chicken broth. Serve cold, plain yogurt on the side. For a Greek-inspired dinner, season your chicken with 1/2 teaspoon dried mint and sprinkle with lemon juice. Serve orzo (a rice-shaped pasta) tossed with sauteed spinach, garlic, onion and tomatoes. Sprinkle with lemon juice, salt, pepper, dill and dried mint. Top with crumbled feta cheese. For the flavors of the Far East, serve cold sesame noodles with chicken and vegetables. To prepare, combine 1/2 cup smooth peanut butter and 1/2 cup hot water. Add 1/4 cup soy sauce, 2 tablespoons red wine vinegar, 2 tablespoons sesame oil, 2 teaspoons sugar or honey, 2 cloves garlic (crushed) and 1/2 to 1 teaspoon hot red pepper or chili oil. Toss with 1/2 pound cooked linguine, cooked chicken pieces, scallions, sweet red peppers, broccoli and cucumbers. As you can see, complex flavors don't have to be complicated to prepare.
