1/2 package spicy chicken and rice seasoning mix -- (1 envelope)
14 ounces coconut milk -- (1 can)
2 1/2 pounds chicken breast -- thighs, drumsticks OR wings

Preparation / Directions:

1. In a medium size bowl, make a marinade by dissolving Spicy Chicken and Rice Seasoning Mix in Coconut Milk. 2. To bake: Place chicken in 9 x 13 baking dish. Pour all of marinade over chicken. Bake in 375 degrees F. oven for 50 to 60 minutes, basting several times. TO BROIL OR GRILL: Dip chicken in marinade. Broil or grill, using medium heat. Turn often while cooking, brushing with extra marinade.
