4 medium chicken breast -- halves, boneless
16 ounces Italian stewed tomatoes -- cut in bite sized pieces
4 ounces sliced mushrooms -- salt free
1 medium onion -- sliced in rings
2 teaspoons Italian seasoning
2 teaspoons garlic chopped
1 teaspoon salt to taste
1 teaspoon pepper to taste
1 package fat-free mozzarella cheese -- shredded

Preparation / Directions:

Place chicken in baking dish. Top with tomatoes and their juice, mushrooms, onions and seasonings. Cover tightly with foil and bake at 350 degrees for 1 hour or until chicken is done. Remove from oven and sprinkle with mozzarella. Cover with foil until cheese melts.
