Southwest Easy-Oven Chicken

Ingredients:

1 cup low sodium chicken broth
1 can black beans
1 can red kidney beans
3/4 cup mild salsa
2 cloves garlic -- minced
1 pound chicken breasts -- sknls,bnls
 

Preparation / Directions:

Preheat the oven to 350 degrees. In a 13X9 baking pan, combine the broth, the beans, salsa and garlic. Add the chicken and baste with some of the liquid. Bake , stirring once unitl chicken is cooked through and liquid is reduced, about 45 minutes I have tried this an liked it. I divided it up in serving sized portions and froze it,and it thawed well. I think dh would like it but would need 2-3 helpings or some filler--maybe some rice or flour tortilla What I did with these was make them and then freeze them in single serving sizes to eat at lunch (instead of those expensive boxed dinners)
