Simple Roast Chicken

4 pound roasting chicken
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 bunch fresh thyme

Preparation / Directions:

Preheat oven to 400 degrees. Rinse chicken inside and out, then pat dry. Remove any excess fat from inside cavity and neck flap. Combine salt and pepper in small bowl. Use about 1/3 of mix to salt inside of cavity. Sprinkle remaining mixture over outside of chicken. Truss chicken. Place in roasting pan. Roast until golden brown and meat thermometer inserted into thickest part of thigh registers 175 degrees. Transfer chicken to platter. Let stand 5 minutes before carving. Prep Time: 5 minutes Cook Time: 60 minutes Makes: 4 servings This is the easiest recipe for roast chicken. Serve it with roasted new potatoes and steamed asparagus or broccoli.
