Ingredients:

6 medium chicken livers
6 slices bacon
3 tablespoons dijon mustard
1 teaspoon freshly ground pepper
1 spray nonfat cooking spray
 

Preparation / Directions:

Remove membrane and cut livers into 18 small pieces. Cut each bacon slice into 3 pieces. Place bacon in skillet. Pour on boiling water and simmer 8 minutes. Remove and drain. Spread liver pieces with dab of mustard. Sprinkle with pepper. Wrap each in piece of bacon and skewer with toothpick. Spray baking sheet with cooking spray. Put liver bundles on sheet. Put in preheated 375 degree oven and bake 15 minutes. 6 servings/Serving size: 3 pieces
